Bruschetta with Mozzarella, Seared Tomatoes & Roasted Garlic

Ingredients

  • ▢ 1 head of garlic – large
  • ▢ 1½ cup cherry tomatoes
  • ▢ ⅔ cup olive oil
  • ▢ ¼ cup kalamata olives
  • ▢ Italian herb seasoning – a small sprinkle
  • ▢ 1 tbsp. balsamic vinegar
  • ▢ 1 loaf rustic Italian bread
  • ▢ 16 oz. fresh mozzarella – or burrata
  • ▢ basil  – for garnish
  • ▢ salt & pepper
