Ingredients  

  • 1 ½ lbs. chicken thighs, boneless, skinless cut into small pieces
  • 2 tbsp. olive oil
  • 1 medium onion diced
  • 8 oz. mushrooms sliced
  • 3 medium carrots peeled and cubed
  • 3 medium potatoes peeled and cubed
  • 4 cups water or as needed
  • 2 bay leaves
  • 1 tsp. salt or to taste
  • 1 tsp. pepper or to taste
  • 1 tsp. turmeric powder optional
  • ⅓ cup chopped parsley

For the Slurry

  • 2 tbsp. water
  • 2 tbsp. all-purpose flour
