Twice Baked Potatoes

Ingredients

Potatoes

  • 4 medium size Russet potatoes scrubbed and dried very well
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Filling

  • 4 tablespoons melted butter
  • 1/3 cup warm milk
  • 1/2 cup sour cream or Greek yogurt
  • 1 teaspoon dried chives (1 tablespoon fresh)
  • 3/4 teaspoon salt more or less to taste
  • 1/2 teaspoon garlic powder
  • 1/4 tsp EACH paprika, dried dill weed, pepper
  • Pinch – ⅛ teaspoon cayenne pepper
  • 1/4 cup chopped green onions
  • 1 1/2 cups freshly grated cheddar, Monterrey or Gruyere (I like half cheddar, half Gruyere), divided
  • 4 oz. (5-6 strips) bacon cooked and chopped, divided
